二、为什么有些茶看来很细嫩,有些茶看来较粗大——芽茶与叶茶
前面说过茶是采茶树新长出来的芽或叶制成,意思是说要“嫩”,老叶是不能拿来当原料的。但嫩中又有别,有些茶是愈嫩愈好,希望朵朵都带有芽心,但有些茶却希望是成熟一点的叶子,也就是等枝叶近成熟后才采。前者是以“嫩芽”为主要原料制成的茶类,称为“芽茶类”;后者是以“嫩叶”为主要原料制成的茶类,称为“叶茶类”。

您有没有发现喝龙井、碧螺春时,叶子比较细嫩,带有很多芽心;但是喝铁观音、武夷岩茶的时候,叶子就比较粗大,而且少有芽心,为什么呢?
因为以嫩芽为主制成的茶,其茶性比较细致;以嫩叶为主制成的茶,其茶性比较豪放。人们为了制成各种不同风味的茶来饮用,在原料上就开始有了不同的选择。我们买回来的茶,不论从干茶的外观或等泡开以后看叶底,都不难看出它是以嫩芽为主的茶还是以嫩叶为主的茶。

“芽茶类”的茶并不是非要全部都是芽心不可,全部都是芽心当然是属质优的茶,但有人嫌它味道不够全面,且太奢侈,所以搭配一二叶刚展开的新叶是被允许的,这也就是所谓的“一心一叶”或“一心二叶”,到了“一心三叶”或“一心四叶”就难免影响品质了,但市场上还是可以看到这类茶,因为不是每个人都随时要喝那么高等级茶的。

“对口三叶”(前三叶)的茶青
“叶茶类”的茶青是等茶树这季的新枝长熟,枝头的顶芽已开面成叶片,新芽不再继续抽长(俗称已成“驻芽”),采下刚刚开面的二叶或三叶。最新开面的芽心会与前面一片新叶成“对口”的样子,所以茶青这时的状况被称为“对口二叶”,如果第三叶还没有变老,可以多采一叶,就称为“对口三叶”。开面叶的茶青比较容易制成带花香的茶,但滋味会嫌薄,所以最好掺杂10%~30%的带芽茶青,也就是在这片茶园的新枝尚未全部长熟之时就要开采。
“芽茶”就如同成长期间的青少年,“叶茶”就如同已经成熟、不再长高了的成年人,以它们作原料制成的茶当然有不同的风味。
“芽心”也称为“芽尖”,会因品种与采收季节的关系带有或多或少的茸毛,这些茸毛在成品茶上会显现出来,称为“白毫”。所以只要看到茶名冠有“白毫”或“毛峰”者,如“白毫银针”“白毫乌龙”“黄山毛峰”“临海蟠毫”等,就表示这种茶很强调白毫,它一定是选用茸毛较多的品种。这些以芽心为主要原料的茶,有些不强调白毫的凸显,制造过程中将茸毛压实,就成了所谓的“毫隐”,如西湖的“龙井茶”;相反,有些芽茶特别强调白毫的可见度,制造过程尽量将茸毛扬开,就成了所谓的“毫显”,如台湾的“白毫乌龙茶”。
