大白菜和豆腐是最好的搭档,豆腐含有丰富的蛋白质和脂肪,与白菜相佐,相得益彰。
大白菜和肉类搭配,既可增加肉的美味,又能使肉类消化后的废弃物在白菜高纤维的帮助下顺利排出体外。
炒白菜前,可先用开水焯一下,因为白菜中含有破坏维生素C的氧化酶,这些酶在60℃~90℃范围内使维生素C受到严重破坏。沸水下锅,氧化酶则无法起作用,从而使维生素C得以保存。
